Our Process

ReCooping your barrel

Prior to ReCooping, special care must be taken to select only "export" or "thick stave" barrels that are Brett, VA, ethyl acetate, TCA or other contaminant free. Your selected barrels should also have no cracks or broken staves that will compromise the barrels structural integrity. Please select your best barrels for us to ReCoop.

Quality Control

In order to ensure a top quality barrel that is contaminant free and can stand the rigor of 6-high stacking, our process requires that a ReCoop barrel pass six inspections prior to shipping.

  • On arrival, we remove the heads, smell the barrel, look for excessive blistering from previous toasts and confirm that there are no cracks or broken staves.
  • After the barrel has been planed we smell the barrel to ensure there are no off-smells.
  • Once the barrel has been cured, we confirm there are no trace elements of wine including ethanol or other alcohols.
  • Upon toasting the barrel, we verify only sweet, oak derived compounds have been released.
  • Once the barrel has been raised, we inspect to see that no cracks have been uncovered.
  • And finally, when the barrel has been hydrated, we test for leaks with air and water pressure.

Any barrels that do not meet this rigorous criteria are rejected for wine production.
